Kolachky Recipe
Ingredients:
2 packs cream cheese (room temp., 8 oz.)
2 c of butter (unsalted); softened
1 lbs of walnuts; chopped
4 c of flour (all-purpose)
1 pc of egg
1 pc of egg white
1 can filling (poppy seed, 12 ounce)
1/2 c of honey
1/2 c of sugar (confectioners’, for dusting)
Instructions:
In mixing bowl, combine butter and cream cheese ’til well-blended. Add flour a cup each time. When dough stiffens, place it on floured table then knead ’til not sticky anymore. Continue kneading for another 3-5 minutes.
Meanwhile, preheat the oven (350 degrees F). Crush walnuts (with the food processor) ’til fine. Add honey and egg. Roll dough on floured table to 1/4″ thick and cut it in 3″ x 3″ squares.
Add one teaspoon filling on center parts of cookie squares. Add either walnut (or poppy seeds for some) on cookies. Roll squares & seal edges, or form like triangles.
Arrange cookies about 2″ apart from each other on ungreased baking sheets. Apply egg whites using brush. Then bake in oven for 15-17 minutes or ’til light brown. Sprinkle the Confectioners’ (or powdered) sugar when cookies are cool.
