Zucchini Cookies Recipe


Zucchini Cookies Recipe

Ingredients:

1 c of zucchini; grated
1/2 c of butter; melted
1 c of sugar
1 pc of egg; well-beaten
1 tsp of cinnamon; ground
2 c of flour
1/2 tsp of cloves; ground
1/2 tsp of nutmeg; ground
1 c of nuts; chopped
1 c of raisins
1/2 tsp of salt

Instructions:
Set oven at 375 degrees F. Prepare a cookie sheet (greased); then set it aside. Using a medium-sized bowl, mix zucchini w/ 1/2 c of butter and 1 c of sugar.

Afterward, mix in egg. Whisk ’til completely incorporated. Mix the following ingredients: nutmeg, cinnamon, salt and cloves. Add this to zucchini mixture.

Blend in chopped nuts, plus raisins. Mix well. Afterward, drop the mixture by dollops (2 inches apart) onto a cookie sheet. Cook in the oven for 12-15 mins.

Vegan Cookie Recipe


Vegan Cookie Recipe

Ingredients:

1 cup of shortening(butter-flavored)
1 cup of sugar
1/2 teaspoon of salt
1 teaspoon of vanilla extract
1 teaspoon of baking soda
2 pcs egg
2 pcs peeled bananas; mashed
1 cup of mini-chocolate chips
2 cup of flour (all-purpose)
1/2 teaspoon of cinnamon (opt)

For Icing:

1/3 cup of sugar (confectioners)
1 Tablespoon of milk
3 tablespoons of butter
1 teaspoon of vanilla extract

Instructions:

Preheat your oven at 350 deg. fahrenheit. Prepare greased cookie sheets. Cream shortening & sugar in mixing bowl until blended.

Add eggs, banana and the vanilla then beat thoroughly. Mix soda, salt and flour together then add into previous mixture. Place shaped tablespoonfuls of creamy batter on the sheets.

Next, bake until it turns light brown, or for 10-15 mins.
In another bowl, mix all icing ingredients. Gradually add milk until a runny consistency is achieved. Drizzle on your still hot cookies.

Spicy Banana Bars Recipe


Spicy Banana Bars Recipe

Ingredients:

1 c of flour; sifted
3/4 c of sugar
1/2 teaspoon of baking powder
1/2 teaspoon of salt
1/4 teaspoon of soda
1/4 teaspoon of allspice
1/3 cup of banana (ripe); mashed
1/4 cup of milk
1 piece of egg
1/4 teaspoon of cloves
1/3 cup of pecans; chopped
1/4 cup of shortening (vegetable)
3/4 teaspoon of cinnamon

For the frosting :
2 tablespoons of butter; melted
1 tablespoon of water (hot)
2 teaspoons of lemon juice
A cup of sugar (powdered)

Instructions:

Mix together all dry ingredients, excluding those for the frosting. Mix shortening w/ mashed bananas and blend completely (for 2 minutes); and then add egg. Afterwards, whisk for another minute.

Mix dry ingredients alternately w/ milk (begin and end w/ dry ingredients. Blend the mixture completely. Blend pecans into the mixture and spread mixture using a pan (13 x 9 inches) smeared with butter and sprinkled lightly w/ flour.

Bake mixture at 350 degrees F (for 22-25 minutes). Mix the first 3 frosting ingredients; then mix in sugar. Apply frosting. Cut into bars.

Southern Pecan Bars Recipe


Southern Pecan Bars Recipe

Ingredients:

1 c of flour; sifted
1/4 tsp of powder (baking)
1/4 c of butter
1/3 c of sugar (brown); paced firmly
1/4 c of pecans; finely chopped

For the topping:
3/4 c of corn syrup (dark)
2 pcs of eggs
1/4 c of sugar (brown); packed firmly
2 Tbsps of flour
1 tsp of vanilla
1/2 tsp of salt
3/4 c of pecans; chopped
30 pcs of pecans; cut into two

Instructions:

Sift flour together with the baking powder. Mix butter with sugar and cream thoroughly. Put dry ingredients. Using a mixer, (a spoon will also do) mix the ingredients completely ’til it achieves a coarse meal-like texture.

Add in pecans, and mix again. Even out firmly in bottom part of a pan 8 x 9 inch in size (greased). Bake for about 10 mins. (350 degrees F).

Blend the 2 pcs of eggs ’til foamy. Mix 3/4 c of corn syrup, 1/4 c of sugar, 2 Tbsps of flour, 1/2 tsp of salt, together w/ a tsp of vanilla; then blend thoroughly. Pour mixture into half-done cooked crust.

Shower with 3/4 c of pecans and arrange the pecans cut into two on top of the mixture. Then, cook again the oven for about half an hour.

Carrot Cookies With Orange Icing Recipe


Carrot Cookies With Orange Icing Recipe

Ingredients:

1.5 c of carrots; peeled & chopped coarsely
3/4 c of sugar (brown)
1/2 c of shortening
2 pcs egg
1/2 c + 3 tbsps of softened butter
2 c of flour (all purpose)
2 tsps of baking powder
3/4 c of coconut flakes
1/2 tsp of salt

For Icing:
1.5 c of sugar(powdered)
1 Tbsp of OJ
2 tsps of orange peeling; grated finely

Instructions:

Preheat your oven at 350 degrees fahrenheit. Place your carrots inside saucepan with just enough water to cover. Boil then simmer for approximately 10 mins. or till carrots have become tender. Next, drain then mash carrots using a big fork. Allow to cool.

Mix together mashed up carrots, eggs, 1/2 c of butter, shortening and sugar inside a medium-sized bowl just until they are smooth. Combine salt, baking powder as well as flour in another bowl until they have blended well. Add into your creamed mix till blended.

Then, add coconut flakes. Arrange tablespoonfuls of batter 2-inches away from each other on non-stick baking sheets. Now, bake until edges turn golden or for about 8-10 mins. Move to cooling racks.

Then, combine all icing ingredients and beat thoroughly. When a smooth consistency has been achieved, spoon over cookies.

Black Walnut Cookies Recipe

Ingredients:

1 c of softened butter
1 c of sugar (white)
1 c of sugar (brown); packed tight
2 pcs egg
1/2 tsp of baking soda
3 c of flour (all-purpose)
1 c of walnuts (black); chopped
1 tsp of salt

Instructions:

Preheat your oven at 350 deg. fahrenheit. Cream sugars and butter in large mixing bowl. Beat in eggs till blended.

Sift soda, salt and flour together, then stir thoroughly to your creamed mix. Lastly, add the walnuts. Roll out dough in to log shapes with a diameter of 2-inches then wrap in waxed paper & chill till set.

Cut logs in to 1/2-inch slices then arrange on cookie sheet. Finally, bake for 8-10 mins.
