Almond Coconut Candy Bars Recipe
Ingredients:
For Crust:
1/4 c of butter
1 c of choco chips (semi-sweet)
1/2 c of crumbs of chocolate cookies
For Filling:
1 c of sugar
3 pcs egg white
2 tsps of vanilla extract
1/2 tsp of almond extract
2.5 c of coconut
36 pcs of almond (whole)
3/4 c of flour
For Glazing:
1/2 c of choco chips(semi-sweet)
3 Tbsp. margarine
Instructions:
Preheat your oven at 350 degrees F. Stretch foil over a 13×9-inch pan and spray with non-stick spray. Combine choco chips and butter, and stir inside a small-sized saucepan on low fire then add crumbs.
Pour the mixture and spread them evenly on foiled pan. Chill until it sets or for about 15 mins.
For the filling, beat the whites till you see foamy peaks. Add in sugar carefully and continue to beat till the peaks get stiffer. Add almond and vanilla extracts then mix well.
Next, blend in flour and coconut. Pour evenly on the crust. Place 6 almonds per row for six rows on bars. Bake 20 to 25 mins., or til center sets and color turns light brown.
Melt the remaining choco chips & butter in saucepan over on low fire. Stir gradually til smooth. Sprinkle over bars and let cool for 4 hrs.

Almond Joy Cookies Recipe
Ingredients:
2 pcs of chocolate squares (unsweetened)
A tsp of Vanilla extract
A can of milk (condensed & sweetened)
Almonds to garnish
3 c of coconut (sweetened); flaked
A pinch of salt
Instructions:
Melt chocolate squares and condensed milk in double boiler. Stir frequently til it becomes smooth. Put coconut flakes in large bowl and pour melted chocolate over it.
Add salt and vanilla extract then make sure mixture totally coats the coconut. Line parchment (paper) over baking sheet and arrange teaspoonfuls of chocolate-coated coconut on it. Push an almond atop each.
Bake for 10-12 mins. at 350 degrees. Since the base browns fast, check on the cookies after 8 mins. of cooking. Take out of oven and let cool, then take cookies out of your baking sheet. Serve or store in airtight containers.

Almond Shortbread Cookies Recipe
Ingredients:
1/4 tsp of salt
3/4 c of sifted confectioners sugar
1 c of margarine
1 tsp of almond extract
2 1/4 c of sifted flour
1 c of almonds; blanched & ground
Instructions:
Mix together salt, powdered sugar & flour and make sure that they are all sifted together. Next, cream the butter. Add in all dry recipe ingredients then mix them well. Then, add in chopped/ground almonds and almond extract. If you want you can chill them so that it will be easy to handle them.
After chilling, a teaspoonful of dough should be shaped in balls then place the dough balls onto baking sheets that have not been greased then flatten them out in circle shapes around 1/2-inch thick. Edges should be fluted so they will form scallop like indentations.
Bake in your oven for about 20-25 mins. at around 325 degrees fahrenheit or just until they are light gold in color. Take them off the sheets right away then make sure they are cooled sufficiently prior to serving.

Cranberry Orange Cookies Recipe
Ingredients:
1.5 c of sugar (brown); packed firmly
1 c of butter (or margarine); melted
1 tsp. of vanilla extract
2 pcs of eggs
2 1/4 c of flour (all-purpose)
2 tsps of baking powder
1 tsp. of soda
1 c of cranberries (sweetened); dried
2 c of oats; rolled
1 c of candies (orange slice); chopped
1/2 tsp of salt
For Glaze:
3/4 c of sugar (powdered)
3 tsps of orange juice
Instructions:
Preheat the oven up to 350 degrees F.
Mix sugar & butter in large mixing bowl, beat mixture until it becomes fluffy & light. Blend in eggs & vanilla. Add powder (baking), soda, flour & salt.
Make sure to mix thoroughly before adding oats, orange candies & cranberries. Next, drop dollops of dough onto the baking sheets (ungreased), leaving a 2-inch space between each dollop. Bake until color becomes golden or for 9 to 11 mins. Move to cooling racks, leave for 15 mins.
Mix all ingredients for glaze, adding just enough juice to obtain a spreading consistency.

After School COokies Recipe
Ingredients:
1/2 c of softened butter
1 c of peanut butter
1 1/3 c of sugar (brown); packed
2 pcs egg
2 tsps of vanilla extract
1 tsp of salt
2 tsps of baking soda
1/2 c of wheat germ
1 c of flour (all-purpose)
1 c of flour (whole wheat)
2 c of oats (quick cooking)
1 tsp cinnamon; ground
1 c of raisin
1/3 c of water
Instructions:
Use your electric mixer to beat vanilla, brown sugar, butter and peanut butter together until it is creamy. Add water and beat eggs into the creamy mixture. Set aside.
In another bowl, mix flours and the rest of the ingredients except for the raisins. Mix well with the earlier mixture, then add the raisins. Grease baking sheet and drop ice cream scoop sizes of batter 2.5-inches apart of each other then sightly flatten them.
Set the oven to 350 deg. F and bake for about 18 to 20 minutes. Let cool for a couple minutes on the baking sheet then move onto racks. Keep in airtight cookie containers.

Almond-Orange Poppyseed Cookies Recipe
Ingredients:
1 1/4 c of sugar
1 1/4 tsp of almond extract
2/3 c of softened butter
1 tsp of vanilla extract
3 tbsps of OJ
2 pcs egg
3 c of flour
3/4 tsp of salt
2 tbsps of poppy seeds
1/3 c sugar (for glaze)
2 tsps of baking powder
Instructions:
Beat butter, sugar, vanilla, and almond extract til it becomes fluffy and light. Blend in eggs and juice. Add 2 tbsps poppy seed, salt, baking powder & flour. Blend mixture well.
Chill dough if needed to make it easier to handle, or add a little flour til it’s not sticky anymore. Heat oven at 350 degrees F. On surface dusted with flour, roll a third of the dough 1/4-inch thick 1/3 of your dough at one time.
Keep the unrolled dough in refrigerator. Use cutter to shape cookies. Place on ungreased baking sheet and bake for about 9 to 12 mins.
To make the glaze, mix 1/4 tsp poppy seed, 1/3 c sugar, 2 tbsps juice & 1/4 tsp almond together. Once blended, spead over cookies while still hot.

Brandy Balls Recipe
Ingredients:
1 1/4 c of butter
3 c of flour
1/2 c of sugar (brown)
1 yolk from an egg
1/4 tsp of salt
1 c of pecans; minced
1/4 c & 2 tbsps brandy (Calvados)
1 c of sugar (powdered)
Instructions:
In large bowl, beat butter and half a cup of brown sugar until creamy. Beat yolk in separate bowl, then add flour & salt. Slowly mix contents into the other bowl, alternating with your Calvados.
Begin and end adding with your flour mix. Fold in pecans then refrigerate mixture for about an hour. Then, shape dough in to 1-inch balls and drop onto greased baking sheet.
Then, bake until color turns light brown or for about 10 mins. at 350 degrees F. Cool for a few minutes then roll on sugar(confectioners).
