1/3 c unsalted butter
2 eggs
1 c sugar
3 tbsps lemon juice
1.5 tsp lemon extract
3.5 c flour
2.5 tsps baking powder
1/4 tsp baking soda
A tsp of lemon peels
A few gratings of whole nutmeg
1/2 tsp salt
Sugar (to coat)

Directions:

Oven should be preheated to around 375 deg. F

Cream butter and sugar together and beat in eggs. Add lemon juice and extract. Mix dry ingredients and stir in until well blended.

Roll dough between hands to form walnut sized balls. Roll in sugar and place them on cookie/baking sheet that is covered with silpat. Bake for about 10 minutes. Remove from oven then gently press down tops while cookies are warm. Makes 4 dozen.

Lemon Ricotta Cookies with Lemon Glaze

Ingredients:

Cookies:

2.5 c flour (all-purpose)
1 tsp of baking powder
1 tsp of salt
2 c of sugar
A stick of unsalted butter, softened
1 lemon, zested
2 eggs
1 (15-ounce) container whole milk ricotta cheese
3 tbsps lemon juices

Glaze:

3 tbsps lemon juice
1.5 c sugar (powdered)
1 lemon, zested

Directions:

Preheat your oven at 375 degrees F.
Cookies:

Into a medium bowl mix flour, baking powder, and salt. Set aside. Into another bowl mix the butter and the sugar. Using your electric hand held mixer beat the butter and sugar until it is light and fluffy, about 3 mins.

Next, add eggs, 1 at a time, beating until incorporated. Then, stir in ricotta cheese, lemon juice & lemon zest. Beat to combine. Stir in your dry ingredients. Line 2 baking sheets with parchment paper. Spoon the dough (about 2 tablespoons for each cookie) on your baking sheets. Bake for 15 mins., until slightly golden at its edges. Remove from your oven & let the cookies rest on the baking sheet for 20 minutes.

Glaze: Combine sugar (powdered), lemon juice & lemon zest inside a small bowl and stir until it is smooth. Spoon about 1/2-teaspoon onto each cookie and use the back of your spoon to gently spread. Let glaze harden for 2 hours. Pack the cookies into a decorative container.

German Chocolate Cake Cookies Recipe

Ingredients:

For Topping:
a cup of sugar (white)
a cup of milk (evaporated)
a teaspoon of vanilla extract
1/2 cup of butter
3 yolks of egg; beaten
1.5 cup of coconut flakes
1.5 cup of pecans; chopped

For Cookie:
a pack of cake mix (German chocolate, 18.25 oz)
1/3 cup of butter; softened

Instructions:

Preheat the oven (350 degrees F).

Blend sugar, half cup of butter, milk, egg yolks and vanilla in two-quart saucepan. Cook on moderate heat until bubbly and thick, approximately about 10-13 minutes, stirring constantly. Add pecans and coconut. Let cool at room temp.

Set 1 1/4 c of topping aside. Using a mixing bowl, put together the softened butter, cake mix and the rest of toppings. Using hands, stir mixture until moistened. Create 1″ balls from dough.

Arrange balls 2″ away from each other on cookie sheets, ungreased. Create indention on each ball’s center and fill 1/2 tsp each with the remaining toppings reserved earlier. Bake around 10-13 minutes, and let cookies cool for five minutes on cookie sheets prior to removal.

Ingredients:

1/2 c of softened butter (unsalted)
1 c of sugar (brown)
3 Tbsps of sugar (granulated)

1 3/4 c of flour; sifted

1.5 tsps of instant coffee powder (espresso); crushed slightly
8 oz of chocolate flakes (semisweet)
4 pinches of salt

Instructions:

Beat together butter and sugars till creamy then add in vanilla and egg; beat to incorporate. Combine together the flour, baking soda, baking powder, salt, and coffee powder in a bowl; add to the mixture of butter. Fold in chocolate flakes.

Scoop spoonful of batter on a baking sheet (greased) then bake inside the oven to 375 degrees F for 8-10 minutes.

Ingredients:

1/2 c of shortening
2 c of flour (all-purpose)
2 tsps of baking powder
1 c of banana;mashed
1/2 tsp of baking soda
2 pcs egg
1/2 tsp of salt
1 c of sugar (brown); packed
1/2 tsp of cloves;ground
1/2 c of pecans; chopped

For Frosting:
2 tbsps of butter
1/4 c of banana;mashed
2 c of sugar (powdered)
A tsp of lemon juice

Instructions:

Preheat your oven at 350 degrees F. Beat sugar and shortening until creamy. Add banana & eggs, blend well.

Next, sift spices, salt, baking soda, baking powder and flour. Mix thoroughly with creamed mixt then stir pecans in.
Place tablespoonfuls of dough 2-inches apart on greased baking sheets. Then, bake 12 mins. then transfer to cooling racks.

For the icing, mix all ingredients together. Beat until mixture becomes smooth & creamy. Spread on the cookies.

Ingredients:

1 pack of strawberries (frozen, 10 ozs); thawed and drained
1 1/3 cup of flour; sifted
1/2 teaspoon of baking powder
1 piece of egg yolk
1/2 cup of shortening (vegetable)
1/4 teaspoon of soda
2/3 cup of sugar
1/4 teaspoon of salt
1 teaspoon of lemon juice
1/2 teaspoon of vanilla

For the glaze:
1 teaspoon of lemon juice
1/4 cup of sugar
2 tablespoons of strawberry juice

Instructions:

Mix the following ingredients: baking soda, baking powder, salt and flour. Mix together sugar and shortening. Whisk thoroughly. Add 1/2 teaspoon of vanilla, 1 teaspoon of lemon (juice) and yolk; and be sure to mix the ingredients completely.

Measure a half cup of strawberries. Afterward, add this (alternately) w/ cream mixture. End w/ the strawberries. Next, drop mixture by a half tablespoonful into a cookie sheet lined with grease.

Cook the cookies for about 10 minutes (375 degrees F).
For the glaze, mix all the ingredients. Then, brush the glaze into cookies while it is still fresh from the oven.

Ingredients:

4 ozs of butter (unsalted)
1 1/4 c of flour (all-purpose)
1/3 c of sugar (brown); packed
1/8 tsp of salt

1/2 c of pecans; chopped fine

Instructions:

Beat sugar, vanilla and butter in medium bowl. Add in flour, salt and pecans. Using your hands, knead mixture gently.

On floured board, roll dough out then slice into squares or circles approximately 1/4 inch thick. Next, bake for around 20 mins. at 325 degrees F. Baking time may change depending on how thick the slices are. If slices are thin, check back at 12 or 15 mins.

Ingredients:

1/2 c of shortening
1 tsp of vanilla extract
1/2 c of peanut butter
1 fresh egg (large)
1/2 c of sugar (white)

2 Tbsps of milk
1-3/4 c of flour; sifted
1 tsp of baking soda
2 pinches of salt
1/4 c of sugar (white)
48 pcs of Hershey’s kisses (chocolate)

Instructions:

Beat the peanut butter and shortening until it becomes creamy then slowly add in the brown and white sugar; beat till fluffy and light. Mix in the milk, vanilla extract, and egg. Combine salt, flour, and baking soda; add into creamy mix.

Shape dough to small balls and roll on sugar. Arrange the balls on the greased baking sheet 2-inches apart and bake for eight mins at 375 degrees F. Take out from oven and press the chocolate into the middle of the cookie; do the same for all. Bake again for two mins or till slightly brown.
