Monster Cookies Recipe
Ingredients:
12 fresh eggs (large)
2 lbs of sugar (brown)
4 c of sugar (white)
1 lb of butter (unsalted)
16 c of oatmeal
3 lbs of peanut butter
1 lb of M&M’s chocolate (plain)
1 lb of chocolate flakes or chips
1 Tbsp of vanilla extract
8 tsps of baking soda
Instructions:
In a large mixing bowl, combine together the eggs, sugars, butter, oatmeal, peanut butter, M&M’s, chocolate chips, vanilla extract, and baking soda. Make sure everything is well incorporated. Scoop up a teaspoonful of batter onto
the baking sheet then bake in the oven (350 degrees F) for about twelve mins.

Cinnamon Bun Cookies Recipe
Ingredients:
2 pcs. eggs
1/2 c of butter (or margarine); melted
3 c of flour (all-purpose)
1/2 c of sugar (white)
2 tsps of baking powder
1 Tbsp vanilla
1 Tbsp of cinnamon; ground
1/2 c of shortening (butter-flavored)
1 c of sugar (light brown)
1 tsp. of salt
For Filling:
2 tsps of cinnamon; ground
1/2 c of sugar (brown)
1/4 c of butter (or margarine)
Instructions:
Mix shortening, butter, as well as sugars, together in large mixing bowl. Then, cream until well-blended. Add eggs 1 after another; and then blend in vanilla.
Next, combine all the dry ingredients together; and then then add in to the cream mixture. After that, cover it; and then place inside refrigerator for a minimum of 1.5 hours.
Meanwhile, preheat oven (375 degrees F).
Mix filling ingredients together in microwable dish. Then, heat and stir constantly ’til butter melts & mixture becomes smooth.
Divide the dough into two parts. Knead each part out on plastic wrapper or flour-dusted surface. Form into two 12×6″ rectangles. Spoon a third of the filling on top of each.
Next, roll again; and then shape each into a long log then slice into 1″ cuts. Place cookies 3″ apart on baking sheet. Bake in oven for about 8-10 minutes then remove (using spatula).

Gingerbread Butterscotch Cookies Recipe
Ingredients:
3 c of flour (all-purpose)
2 tsps of baking soda
1.5 tsps of cinnamon ground
3/4 tsp of ground cloves
1.5 tsps of ginger ground
1.5 c of packed sugar (brown)
1 c of margarine or butter; softened
1 pc egg
1 pkg of butterscotch morsels
1/3 c of molasses (mild)
4 pinches of salt
Instructions:
Preheat the oven (350 degrees F). Using a bowl, combine baking soda, salt, flour, cloves, cinnamon, and ginger. Beat molasses, egg, sugar and butter ’til creamy in another bowl. Add to previously combined dry ingredients gradually while beating until blended well. Add morsels.
For each cookie, drop one tablespoon of the mixture on an ungreased cookie sheet and bake ’til cookie colors are light brown, approximately 9-11 minutes. Let cookies cool for about two minutes before removing to racks for complete cooling.

Ginger Softies Recipe
Ingredients:
2/3 Tbsp of ginger ground
2 1/4 c of flour
1/3 Tbsp of baking soda
1/2 tsp of ground cloves
3/4 tsp of cinnamon ground
3/4 c of margarine; creamed
2 pinches of salt
1 c of sugar (white)
1 Tbsp of water
1 pc of egg
2 Tbsps of sugar (white)
1/4 c of molasses
Instructions:
Preheat the oven (350 degrees F).
Sift salt, cloves, cinnamon, baking soda, ginger and flour together, and set them aside. Mix 1 c sugar and margarine together in large mixing bowl until fluffy and light. Add egg, beat together, and add molasses and water. Gradually add sifted items to the mixture while stirring.
Form the mixture into walnut-sized balls then roll in 2 Tbsps sugar. Put them flattened a little, 2″ apart each, on ungreased baking cookie sheets. Bake around 8-10 minutes and allow let them cool for five minutes. Remove from sheets and store inside air-sealed jars

Hazelnut Linzer Cookies Recipe
Ingredients:
a cup of sugar
12 ounces of butter (room temp.)
14 ounces hazelnuts (ground & toasted)
2 pieces of eggs
1/2 teaspoon of cardamom
1/4 teaspoon of salt
1 tablespoons of cinnamon
1 tablespoon of baking powder
2 teaspoon of nutmeg
3 1/4 cups of flour
Raspberry jam
Instructions:
Preheat the oven (325 degrees F).
Toast hazelnuts then remove skins. Process in grinder for coffee. Using Kitchen Aid bowl, utilize the attached paddle or your hand to cream sugar and butter together. Then drop eggs gradually and add hazelnuts.
Using another bowl, put together baking powder, flour, cinnamon, nutmeg, cardamom and salt. In thirds, pour this dry mixture on the previously made wet ones, stirring ’til they combined well. Create balls of 1″ from dough and arrange on baking sheets about 1.5 inches away from each other.
Create a well on center portions of cookies using your finger. Put 1 teaspoon jam on these spaces. Bake cookies (12 minutes) and turn tray around when done. Return to oven, then continue baking (another 12 minutes).

Orange Ginger Bars Recipe
Ingredients:
2.5 c of flour; sifted
1/2 tsp of salt
1/2 tsp of ginger; grated
1/4 tsp of baking soda
1/4 tsp of nutmeg (ground)
1/2 tsp of cinnamon (ground)
1/2 c of shortening
1/2 c of sugar (brown)
1/3 c of molasses
1/4 c of cooled coffee (strong)
1/2 c of orange marmalade
For the Icing:
3 Tbsps of orange juice
2 Tbsps of butter (unsalted); softened
2 c of confectioner’s sugar
1 tsp of orange zest; grated
Instructions:
Preheat the oven at 400 degrees F. Grease and flour two 13×9 inch baking pans.Combine the salt, baking soda, flour, ginger, nutmeg, and cinnamon in a bowl and set aside. Mix the sugar, shortening, and molasses; beat ’til it becomes creamy then add in the orange marmalade.
Alternately add in the mixed flour and coffee into the mixture of cream. Incorporate well.Transfer the batter onto the baking pans and bake for 12 to 15 minutes.
Let it cool for 5-10 minutes and cut to bars. To make the frosting, beat the orange juice, butter, confectioner, and orange zest in a bowl until it becomes creamy and smooth. Place the frosting on top of the bar and cover it on top with another bar like a sandwich.

Gingerbread Cookie Recipe
Ingredients:
1/2 c of shortening; creamed
1/2 c of sugar (brown)
1/2 c of molasses (dark)
1/4 c of water
2.5 c of flour (self-rising)
1/4 Tbsp of ginger
1 pinch of allspice
2 pinches of nutmeg
Cherries; candied
Raisins
Gum drops (red)
String licorice
Citron
Decorator’s icing
Instructions:
Cream the sugar and shortening together. Add in allspice, nutmeg, ginger, flour, water and molasses. Chill mixture for 2 to 3 hours.
Preheat the oven (375 degrees F). Apply flour on cloth-covered board and roll 1/4″ dough on it. Cut cookie shapes using knife or biscuit cutters and put on ungreased baking/cookie sheet. Bake 10 to 12 minutes and remove cookies from cookie sheets immediately, let them cool.
If you want crispier treats, roll 1/8″ thick dough and allow to bake in eight minutes. Shape the cookies however you want it.
To create gingerbread man, put raisins on cookie for the nose, buttons and eyes. Use licorice and fruit candies on other trims. This recipe creates 24 cookies.

Ginger Creams Recipe
Ingredients:
1/2 c. of water (hot)
1/2 c. of sugar
1/4 c of shortening
1/2 c of molasses
2 c of flour
1 pc of egg
1 tsp of soda
1/2 tsp of each of the following items:
half a tsp of salt
half a tsp of ginger
half a tsp of cinnamon
half a tsp of nutmeg
half a tsp of cloves
For Frosting:
1/2 tsp of vanilla
2 Tbsps of butter; creamed
2 c of powder sugar
2-3 Tbsps of milk
Instructions:
Preheat the oven (375 degree F). Grease the baking sheets.
Using a mixing bowl, mix and blend 1/2 c of sugar, 1/2 c of hot water, 1/2 c of molasses, 1/4 c of shortening and egg. Add the non-frosting ingredients remaining.
Drop teaspoonsful of mixture on greased baking sheets, arranging 2″ apart. For 10 to 15 minutes, bake cookies ’til gold brown in color. You must immediately take off cookies from baking sheets. Let it cool.
Combine frosting ingredients and beat them ’til fluffy. When cookies are cool already, top it with frosting.
