Carrot Cookies With Orange Icing Recipe
Ingredients:
1.5 c of carrots; peeled & chopped coarsely
3/4 c of sugar (brown)
1/2 c of shortening
2 pcs egg
1/2 c + 3 tbsps of softened butter
2 c of flour (all purpose)
2 tsps of baking powder
3/4 c of coconut flakes
1/2 tsp of salt
For Icing:
1.5 c of sugar(powdered)
1 Tbsp of OJ
2 tsps of orange peeling; grated finely
Instructions:
Preheat your oven at 350 degrees fahrenheit. Place your carrots inside saucepan with just enough water to cover. Boil then simmer for approximately 10 mins. or till carrots have become tender. Next, drain then mash carrots using a big fork. Allow to cool.
Mix together mashed up carrots, eggs, 1/2 c of butter, shortening and sugar inside a medium-sized bowl just until they are smooth. Combine salt, baking powder as well as flour in another bowl until they have blended well. Add into your creamed mix till blended.
Then, add coconut flakes. Arrange tablespoonfuls of batter 2-inches away from each other on non-stick baking sheets. Now, bake until edges turn golden or for about 8-10 mins. Move to cooling racks.
Then, combine all icing ingredients and beat thoroughly. When a smooth consistency has been achieved, spoon over cookies.
